Katsuo Tataki of Japanese / Cubed Bonito steak recipe by fishery company at Yaizu

We’d like to introduce a way of eating Katsuo Tataki that isn’t the usual sashimi way. In this recipe we’ll introduce Cubed Bonito.

We’d like to introduce a way of eating katsuo tataki that isn’t the usual sashimi way.
In this recipe we’ll introduce Cubed Bonito.

It’s a great accompaniment to drinks and goes nice bread, too.
You can serve it one rice, and it will be the traditional Japanese dish called donburi.

Ingredients(Serves 4)

  • 2pieces of bonito tataki
  • some sushi (sweet) vinegar for soaking
  • a pinch of salt
  • some sesame oil for frying

 

First, Let’s start cook sauce, please choose favorite flavor from two kind sauce.

Onion Sauce

ingredients
  • ½ an onion
  • garlic paste to taste
  • 100cc soy sauce
  • 100cc Japanese sake (or white wine)
  • 1 Tb spoon vinegar
  • 1 Tb spoon sugar
Cooking Steps for Onion Sauce
  • Grate the onion

  • Put soy sauce, sake(white wine), vinegar, and sugar in a saucepan, stir while heating until boiling

  • Add (1) and garlic to (2), then boil for one more minute.

Ginger Sauce

ingredients
  • 10 grams of ginger
  • 100cc soy sauce
  • 100cc Japanese sake(or white wine)
  • 3 Tb spoons vinegar
  • 2 teaspoons sugar
Cooking Steps for Ginger Sauce
  • Grate ginger
  • Mix all ingredients in a bowl 

Making Cubed Tataki with Sauces

  1. Sprinkle salt over katsuo tataki / bonito and rub in
  2. Heat sesame oil in a frying pan, add (1) and saute until brown on both sides.
  3. Pour vinegar in a flat dish and soak (2) on each side
  4. Cut (3) into cubes
  5. If using onion sauce : Pour onion sauce over the cubed tataki and garnish with fresh vegetables.
    Or

    5′.  If using ginger sauce : Pour ginger sauce over the cubed tataki and sprinkle dried bonito flakes /Katsuobushi
